Tip for handling meat and cold-pressed oils

The win-win situation for meat and oil: prepare gently and finally flavour with a special product such as a high-quality pure varietal oil. This works with fish, meat and also with vegetables. An illustrative example is the preparation of bread croutons. Frying them at over 80 degrees in a pan with an authentic, wonderfully intense walnut oil or sesame oil is useless. Unfortunately, the taste of a high-quality product that we want to preserve dissolves into nothing from a temperature of 80 degrees. Therefore it is better to fry the croutons in butter or put them in the oven and drizzle them afterwards with a great oil.
