Mayonnaise prepared with sesame seed oil harmonizes especially well with fish – whether freshly fried, smoked or canned. Paired with flaxseed oil, which contains valuable omega-3 unsaturated fatty acids, it is also very healthy.
Use the ingredients at room temperature. Mix the egg yolk with the salt and pepper, 1 teaspoon of pear vinegar and 1 teaspoon of hazelnut mustard. Use a hand mixer.
Add the oils, first just by drips and then gradually increasing the quantity, mixing it continuously until it becomes a thick pulp.
The mayonnaise prepared in this way must be consumed within a day. If you use grated boiled egg yolk (instead of using it raw), it will keep for several days, stored in the fridge.
