We can make not only fine cakes from plums but also a delicious cream soup. Our baked plum cream soup is a wonderful mix of sweet, salty, piquant and spicy flavors. Enjoy it cooled!
Wash the plums, cut them in half and remove their stones. Place them in a tin, together with the fresh rosemary sprigs and the sugar.
Bake them in an oven at 180 °C for about 25-30 minutes and then let them cool.
Put the baked plums into a glass blender, together with the vegetable stock, the blackcurrant vinegar, the pepper and a little salt. Add the cream and then blend it all until creamy.
Serve it sprinkled with almond oil and coarsely chopped almonds.
