Cantaloupe salad with grape seed oil and olives

Cut up the cantaloupe.


Slice the olives in half. Cut the feta cheese into cubes.


Place the cantaloupe, the olives and the rucola in a mixing bowl.


Put the quince vinegar in a closeable jar. Add a pinch of salt, wait until the salt dissolves. Add the oils, the mustard and the freshly ground pepper. Close the jar and shake its content thoroughly.


Pour the dressing on the salad and mix them thoroughly. Finally, add the cubed feta cheese.
