A popular side-dish of the summer grill parties is the Greek salad. In this version, it is prepared with the refreshing and light camelina oil. Make sure to cool it well before consumption, so that the flavors can mature and blend. Add the cheese only when serving it.
Cut the cucumber in half lengthwise, scrape out the wet core with a small spoon and then cut its firm flesh into cubes.
Remove the core of the bell pepper and cut it into cubes as well.
Finely chop a medium sized purple onion. Cut the cherry tomatoes in half.
Place the sliced vegetables in a mixing bowl, adding the olives and the snipped basil leaves. Salt and pepper it, and mix in the camelina oil. Cool it well.
Before serving, cut the feta cheese into small cubes and sprinkle them on the salad.
