This recipe of oven fried fish in breadcrumbs with celery root and walnut oil puree is a real holiday treat, and is also weight loss friendly. It is truly scrumptious, yet easy to prepare even for beginners in cooking.
Peel the celery root and cut it into small cubes. Bring it to a boil with the water and the milk and then allow it to simmer at low heat to prevent the milk from precipitating. Salt and pepper it.
When it is done, blend it until creamy together with the walnut oil.
Remove the bones and the skin of the fish and then absorb the excess moisture. After salting it, smear each side of the fish fillets with the rape seed oil and roll them in the tiger nut flour.
Fry the fish in a ventilated oven preheated to 180 °C for 8-9 minutes. Serve it right away.
Before serving, sprinkle it with some apple balsamico crema and garnish it with sprouts.
