One of the most popular vegetables of the spring is asparagus, which has several beneficial effects on health. Asparagus can be beautifully combined with strawberries as a salad, made truly special by the blueberry vinegar dressing enriched with the omega-3 oils.
Wash the asparagus spears to remove any sand. Then take each spear in your hand and break it in two. The part towards the asparagus crown is the one that is definitely tender and useable.
Cut off the crowns and cut the remaining parts in pieces of about 2 cm in length. Cook them in slightly salted, boiling water for about 4-5 minutes and add the crowns in the last 1 minute.
After 6, max. 7 minutes (in the case of medium sized, green asparagus) remove them from the fire and cool them in icy water.
Meanwhile, prepare the salad dressing with the blackberry vinegar and the mix of hempseed and chia oils.
Put the sliced strawberries and the asparagus in a mixing bowl and toss the salad thoroughly with the vinaigrette. To serve, pepper it to taste and sprinkle it with some sesame seeds.
The unused asparagus parts can be used for making vegetable stocks. Green asparagus does not need to be peeled, it is enough to wash them thoroughly.
