Peel the carrots and then cut them into very thin slices with a vegetable peeler.
Pour the apricot vinegar in a small, closeable jar and add the salt. Allow some time for the salt crystals to dissolve.
Add the camelina oil, the pepper and the vanilla grist. Close the jar and shake it thoroughly to help the ingredients mingle.
