Pour the apricot vinegar in a small, closeable jar and add the salt. Allow some time for the salt crystals to dissolve.

Add the camelina oil, the pepper and the vanilla grist. Close the jar and shake it thoroughly to help the ingredients mingle.

Mix the pomegranate seeds and the sliced carrots, and then toss them together with the dressing.

Garnish it with some sprouts before serving.
